Pancakes
Pancakes are the perfect start to a great weekend. They are simple and easy to make. Children love them because they're soft and fluffy and tasty to eat.
Because my children love pancakes, I make them frequently and as a result have grown to like them as well. We are all used to the box mixes that make it simple to whip up together, with just some eggs and milk, or water. But to make pancakes healthier, I make my flour mix at home, with household pantry items.
Not only is it healthier to make our own mix, but this mix also tastes better and gives the pancakes a lighter, and fluffier texture. I even make a few extra batches of the mix, so I don't have to every morning.
Every now and then I add bananas or blueberries to the batter on the pan, which enhances the flavors. Rather than maple syrup, I prefer a thin coat of honey added to a healthy dollop of butter on the top of my stack of pancakes.
Depending on your palate, you can add chocolate spread, syrup, or some kind of jam. You could also serve the pancakes with a healthy dusting of powdered sugar.
