Carrot Salad

Salads are a good source of natural fibers with many nutritional benefits. They are a great way to get the daily portions of fruits and veggies our body requires to be healthy. They help build strong bones in children, build up muscles in youngsters, and control weight and contribute to a healthy heart in adults.

My go-to is a carrot salad, which I usually prepare with some cabbage. I add some crushed peanuts and walnuts for crunch, and lemon juice and black pepper, for the tang and spice respectively. However, I recently came across this new carrot salad recipe.

The recipe was unusual, and nothing like I had seen before, but it won me over with it's flavor and delicious taste. Not only that, the steps were simple to follow, quick and easy to make. Ready in 5 minutes, and healthy as well.

I really enjoyed the salad, as did my husband. I even recommended it to my children, who generally avoid salads. Even they find this to be a tasty dish, and as a mom I can rest easy that they're eating healthy.
