Avocados

04/16/2021

Having lived most of my life in various parts of Asia, there were new adventures awaiting me when we moved to Kenya. One of these fresh experiences was avocados.

I had heard of avocados, but hadn't ever consumed them before landing in Kenya. Although not a common sight in Asia, I have seen them sold in supermarkets, once in a while. It was only when we moved to Nairobi, that I saw them in abundance. It was then that I learned of the health benefits of the nutrient rich fruit. (Proven Health Benefits of Avocado)

Initially, I snacked on avocados, as I would any other fruit. However, I noticed with it not having a particularly sweet taste or tangy flavor like other fruits, I had to change it up. I did some sleuthing and discovered various ways to integrate them into my diet. I concluded that I would have to incorporate them into my meals, rather than consume them exclusively.

Avocados are good by themselves or with a sprinkle of salt and pepper, but they are even better on toast, in sandwiches, milkshakes, and salads. My favorite way to have it is as part of a salad. I feel that with its smooth, buttery texture, a salty, tangy salad is the perfect compliment to a ripe avocado.

I have salads everyday - my preferred salads are cucumber, cabbage, or yogurt based salads. This avocado salad recipe has become one of my favorites.

I make it at least once a week, and it has become one of my go-tos for the week. It's tasty, simple and easy to make.

I encourage you to add avocados to your diets as well, and reap all of its many health benefits. Have it in a salad, or try different ways to see which you prefer.
